Sassy Salsa

2 – 28 ounce cans whole tomatoes

4 Roma tomatoes

Handful of Cilantro

2 limes

½ Red onion

½ cup pickled jalapeño

1 tbsp. red wine vinegar

1 tsp. Nature’s Seasoning

1 tbsp. sugar

1 tsp. garlic powder

1 tsp. cumin

¼ tsp. black pepper

¼ tsp. salt

In a blender, blend cilantro, jalapeños, red onions, lime, vinegar and last 6 ingredients. Drain and save juice from can of tomatoes. Add tomatoes to blender and pulse until they are chunks or to desired consistency. Depending on flavor from the jalapeños add more of the saved tomato juice or jalapeño juice from the can.

Side note: My blender will hold enough to double the recipe. (And a few times I have exploded the blender all over my kitchen because I had too much!) A double makes roughly 5-6 of these Pint Jars 12 Count (16 OZ).
