Roasted Chicken {Recipe}

I love a good rotisserie chicken. It is an easy thing to have in the refrigerator and eat on for a few days. But then I did a Whole30 and started reading all the labels… Bye-bye beloved Costco chicken. Enter crockpot roasted chicken. I originally got this from Melissa Hartwig on The Dr. Oz Show but my chicken didn’t turn out like hers did on the recommended time. Here is what works for me. Adapted from her recipe.

4-5 pieces of foil

1 Whole Chicken (usually about 4-5 lbs.)

1-2 Tablespoons Avocado Oil

All-purpose seasoning

Crumple the pieces of foil into balls and add to the bottom of the crockpot. Place the whole chicken on top of the foil balls. This keeps it from getting soggy from sitting in all the juices. Drizzle the Avocado oil over the chicken, I go over it with the bottle back and forth once, it’s probably about 2 tablespoons. Sprinkle the all-purpose seasoning all over the chicken or as desired for flavor. Cook on high for 7-8 hours or on low overnight (10-12 hours).
